Last Minute Superbowl Party Menu Ideas



As much as I love to consider myself a great planner, I am still all about great LAST MINUTE recipes. As a working mama of a 2 year old and 4 year old, I try to plan meals for the week ahead, but end up planning for one day ahead.

Or sometimes it's even more like, "What can I make for dinner in the next 30 minutes!?"

Or, in true reality, "What can I make for dinner in the next 10 minutes while my toddler is whining for food, and my preschooler is zooming an airplane through the kitchen while screaming?"

If you're a bit of a last minute planner like me, I thought I'd share some good eats for your Superbowl get together this Sunday.

Even if you're not a football fan (like me, although I try to be for my Hubby!), you can always use these recipes for your next get together or party.

White Bean, Basil and Lemon Hummus

Happy New Year my friends!

I hope you rang in 2015 in a great way. I think this was the first year I chose to sleep rather than watch the ball drop. But I have to say, I felt great the next day. And THAT is the key to getting through a day with our active 2 and 4 year old kiddos!

We're all striving for healthy living in 2015, right? I thought I'd share a healthy and allergy-friendly recipe that's perfect to start a healthy new year:

White Bean, Basil and Lemon Hummus

It's a very easy homemade hummus that's also sesame-free. Perfect for Little Guy who has a food allergy to sesame. 

The recipe is adapted from a hummus recipe on a healthy-living and recipe website called Aloha. If you're looking for a fresh, delicious and easy homemade hummus recipe, this one is great!

You start off with all of these lovely ingredients:

Then in a food processor or blender, blend your oil, lemon, garlic and sunflower seeds until rather smooth.

And finally add the rest of your ingredients until you have a beautiful and creamy hummus.

I served it with these colorful veggies: Carrots, cucumbers and cherry tomatoes.

And also with some less healthy, but satisfying and salty snacks too.

So how do you really know if your cooking is a success?  By the reaction of your harshest critics: Your kids! 

Little Gal loved this hummus and decided to eat it with a spoon - no veggie or salty snack hummus-delivery system needed!

White Bean, Basil and Lemon Hummus
Print this recipe

Ingredients:

  • 2.5 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 1 garlic clove
  • 2 Tbsp raw and hulled sunflower seeds
  • 15 oz. can cannellini beans, drained (my can included salt)
  • 1 bunch fresh basil
  • 1/4 tsp salt (adjust this based on whether you use salted or unsalted beans)

Directions:

  • In a food processor or blender, blend your oil, lemon, garlic and sunflower seeds until rather smooth
  • Blend the rest of your ingredients, beans, basil and salt, until you have a beautiful and creamy hummus.
Top with sunflower seeds, tomatoes or pieces of freshly torn basil to make it pretty. Or eat right out of the food processor!

Disney Kids Preschool Playdate: Food Allergy Friendly!


I received a celebration kit from Walt Disney World Resort and MomSelect in order to host a Disney Kids Preschool Playdate. Of course, all opinions are my own. This post also includes affiliate links.

I had a fun opportunity to host a Disney Kids Preschool Playdate this weekend as a part of Disney Social Media Moms. It was such a fun surprise to receive this celebration kit in the mail and brainstorm all the ways we could use it for our playdate!

And what about the food!?  

Fun snacks like these Nemo fruit snacks were provided in the celebration kit. These were safe for Little Guy. However, there were also granola bars and crackers that weren't safe for him. So, I provided different Disney themed food allergy friendly snacks at our playdate instead.

Little Guy loves these Fruit Crisps. The Nemo fruit snacks were fun too!

I also decided to make it more of a lunch since I hardly host playdates, and it was time for a little party!

We of course had a food allergy friendly meal since Little Guy and another friend have food allergies. We had chicken nuggets, Ians Natural Foods Alphatots, fruit salad, green salad, veggies and homemade hummus, and Pacific "Creamy" Butternut Squash Soup (not pictured).

Everyone enjoyed their meal, but of course saved room for dessert.

We also decorated cupcakes. Just look at these cute Mickey and Minnie mouse cupcake wrappers.

I provided Enjoy Life Dark Chocolate Chips and Enjoy Life Chocolate Mini Chips along with a variety of colored sprinkles.

The kiddos had a fun time decorating their cupcakes.

I also tried out my hand at decorating cupcakes Mickey Mouse style. There are LOTS of Mickey Mouse cupcake ideas on Pinterest which were either too time consuming or not allergy-friendly. 

So, what's a busy mama to do?  Improvise!!

I used the Enjoy Life Dark Chocolate Chips as Mickey's face and the Enjoy Life Chocolate Mini Chips as his ears on these cupcakes.  Pretty cute, right?

Then I used my wax paper and sprinkles method (no cookie cutter needed) for these cupcakes. It took about 2 times of trial and error, but it finally worked out!

Everyone raved about these vegan cupcakes and homemade icing that is food allergy friendly.  I'll write a separate post about the recipes I used for these tasty cupcakes!

Oh boy did we have fun! This post is really a good illustration of why I blog. Mamacado has opened up a number of fun opportunities for our family. From meeting new people, to going on fun family excursions, to getting together with old and new friends. It also offers a way to feature the bright side of life and show others how we try to live positively with food allergies.

Broccoli Coleslaw Salad #eggfree #easyrecipe

If you're looking for a different, tasty and food allergy friendly side dish for upcoming Labor Day picnics, I have a great one for you.

I whipped up a tasty broccoli coleslaw recipe this weekend for a family dinner. The recipe is egg-free and free of traditional mayo. Everyone loved this broccoli coleslaw and many second helpings were taken :)

Why do I love this recipe so much?
  • It's a unique side dish for picnics and other meals
  • It includes lots of healthy ingredients like broccoli, apples and cabbage (According to WebMD, cabbage contains chemicals that are thought to help prevent cancer!)
  • It's egg free and allergy-friendly
  • It's a nice mixture of flavors and textures (sweet, "sour" from the vinegar, crunchy and soft) and the dressing is lighter than the usual heavy creamy coleslaw recipes

Main ingredients:
  • 14 oz bag shredded cabbage (my bag included carrots)
  • 2 cups broccoli (cut/pulled into small florets)
  • 2 apples, diced
  • 3/4 cup craisins
  • 3 Tbsp sunflower seeds (I used Gerbs Lightly Sea Salted Sunflower Seeds)
Dressing Ingredients:
  • 2/3 cup Earth Balance mayo (egg-free)
  • 4 Tbsp apple cider vinegar
  • 2 Tbsp sugar
  • 1 tsp fresh lemon juice
Directions:
  • Mix together main ingredients
  • Mix together dressing ingredients
  • Pour dressing on main ingredients and mix well. Refrigerate before serving.

Our family meal this weekend included barbecue chicken, wild rice and salad, plus the coleslaw. Since many barbecue sauces have artificial and/or added ingredients in it, I used Wegmans Organic BBQ Sauce. It tasted great and the kids even loved it!

This broccoli coleslaw would work perfectly with other meals like:

Chicken with pepperoni sauce

Homemade crockpot BBQ pulled pork

Turkey burger with avocado, tomato and corn

Easy Baked Chicken Fajitas #Dairyfree

I wanted to share a recipe with you that we've been making frequently this summer. It's an easy, one pan meal that we ALL love. Did you catch that?

Now that's a GREAT recipe!

Easy Baked Chicken Fajitas

The husband and I are both fans of Mexican-inspired food, and this easy baked chicken fajita recipe satisfies us both! It's rather healthy and filled with protein, veggies and healthy fats if you include avocado. And with a blog name like Mamacado, you know we include avocado!

The recipe is based on this one from Self magazine, but I took a few shortcuts to make it easier. Because all mamas (and parents!) need shortcuts!

I also made it food allergy friendly and dairy free by substituting avocados as a tasty topping instead of greek yogurt. Here's how you do it.

Chop up all your veggies (peppers and onions) and add them to your 9 x 13 pan that you've sprayed with olive oil.

Add the tomatoes. Place the chicken on top of the veggies. Make the marinade and pour it on both sides of the chicken.

If you're prepping it for tonight's or tomorrow's dinner, put some plastic wrap on and stick it in the fridge. This helps the chicken sit in the marinade a bit.

When you're ready to cook it, pop it in a pre-heated 400 degree oven until the chicken is cooked. Depending on the amount and thickness of chicken, this could take 20 minutes to 1 hour. Invest in a good meat thermometer to make this easy!!  I am a fan of non-digital thermometers like this that do not need batteries and have the meat temperature reference chart on the side!

When the chicken is just about done, put your tortillas in foil (or have them ready in foil in the fridge) and pop them in the oven for a few minutes to warm them up.

Cut up the chicken in smaller pieces when cooked (you can really do this anytime).

To go along with this meal I also cooked some brown rice and mixed in some black beans, frozen thawed corn, cumin and salt.  It was a nice side to add to this meal.

You know what else I love about this meal? The leftovers are great to make easy fajita bowls. Even if there's no chicken left, a little bit of rice, beans corn and fajita leftovers make a great lunch the next day.

Recipe

Basic ingredients:
  • Boneless skinless chicken breast (between 3/4 lb to 1.5 lb - I've used many different amounts of chicken and it's worked well each time - just adjust your cooking time)
  • 1 medium onion
  • 2 peppers (use different colors if you'd like to make it pretty)
  • 1 can diced tomatoes (I've made it with no salt diced tomatoes, salted tomatoes and tomatoes with green chilies. It's worked well each time).
Marinade:
*you can double this marinade recipe if you're making lots of chicken!
  • 2 Tbsp fresh lime juice
  • 4 tsp olive oil
  • 2 tsp chili powder
  • 2 tsp ground cumin
  • 1/2 tsp garlic powder
  • salt and pepper to taste
Add-ons:
  • Fajita tortillas - as many as you can eat!
  • Salsa
  • Fresh cilantro
  • Avocado
  • Rice side dish including brown rice, black beans, corn, cumin, salt and pepper

Directions:
  • Add chopped peppers and onions and can of tomatoes to 9 x 13 baking dish coated with olive oil
  • Add chicken
  • Pour marinade on chicken and mix with veggies
  • Bake at 400 degrees until chicken is cooked throughout. This could take 20 min to 1 hour depending on the amount and thickness of chicken. Use a meat thermometer!
  • Warm tortillas in foil in oven for a few minutes.
  • Serve with other add-ons.

Food Allergy Friendly Party: Easter and Birthday Celebrations

How do you have an amazing egg free, dairy free, nut free and sesame free Easter and birthday celebration? Here's how!

You wake up to two great food allergy friendly Easter baskets that the Easter bunny left for Little Guy and Little Gal. The baskets included: Fun mess free marker and pad, new cups for the kiddos, the TASTY Pascha Organic Chocolate (free of the top 8 allergens!), Annie's Organic Bunny Fruit SnacksSimply Balanced Strawberry Fruit Strips and Play-Doh Eggs.

You eat a well-balanced and healthy food allergy friendly meal with your family to celebrate both Easter and Little Guy's birthday.  What did we have? Ham, shrimp cocktail, chips and salsa, fruit salad, green salad, sweet potatoes (not pictured - in the oven!), no mayo potato salad and homemade rosemary bread.

You of course don't worry about any messes that you made while trying to prepare the meal.  OOPS.

You let your Little Guy help put the candles in his egg free, dairy free, gluten free and nut free cake (I used King Arthur Gluten-Free Chocolate Cake Mix). With Little Gal trying to stick her finger in the icing for a secret lick. Priceless.

You eat a wonderful food allergy friendly dessert (including chocolate chip cookies and Snicker-doodles!) with the whole family and celebrate a beautiful Easter and birthday party for Little Guy.
