I'm currently 35 weeks pregnant and I haven't had many pregnancy cravings so far (other than my new love for black olives on salads, and recently, cereal and milk as a snack!). I wouldn't say I was "craving" this meal, but I was definitely in the mood for pulled pork BBQ sandwiches. Even though there are SO many BBQ sauces offered at grocery stores, I couldn't find a good one that didn't include a lot of "junk" like high fructose corn syrup, or one without possible food allergens in it. I've recently seen a few brands that I might buy in the future, but here's a recipe I found for homemade BBQ sauce.
I adapted it from a recipe for BBQ pulled pork in the April 2012 issue of Parents magazine. I adapted the recipe a bit, and cooked it in the crockpot instead of the oven. Here are the BBQ sauce ingredients I used:
- 2 cups ketchup
- 1/3 cup apple cider vinegar
- 2 Tbsp Worcestershire sauce
- 1/4 cup brown sugar
- 1/4 tsp chili powder
- 1/4 tsp pepper
Roughly chop an onion and add it the bottom of your crockpot:
Add your pork:
Top it with about half of the BBQ sauce mixture:
Once the pork is fully cooked (use a meat thermometer to make sure), just pull it apart with two forks. Add some more BBQ sauce (that hasn't touched raw meat), and serve!! I ate mine on a whole wheat roll with a simple salad of greens and Good Seasonings vinaigrette dressing.
