Crockpot Chicken Fajitas

I'm not a big crockpot cooker, but sometimes it's nice to throw everything in a big pot so it's ready in time for dinner without worrying about having to cook that day.  This is just one version of crockpot chicken fajitas that I threw together the other day.  We've been eating this chicken for the past few days in different forms (in wraps, on salads, with gluten-free spaghetti, etc.!).  So, I'd say it was a successful recipe!

Here are the ingredients I used - all things I had in my cabinet, freezer and fridge!

  • 1 bag frozen onion and peppers
  • 1 cup chicken broth
  • 2 packages organic chicken
  • 1 package fajita seasoning 
Directions:
  • Add onions and peppers to bottom of crockpot,
  • Pour in chicken broth
  • Add chicken
  • Add fajita seasoning


Here's the chicken right after cooking for a few hours in the crockpot (my crockpot cooks SO fast!).  I always use a meat thermometer to make sure it's the correct temperature.  One of my most used kitchen utensils.

I shredded it, then added salsa, avocado and tomato.  The below photo is my fajita on a regular flour wrap. I used a gluten-free rice based wrap for my son's fajita.

The three of us were REALLY hungry for dinner, so I didn't take time to snap too many pretty photos.  But we all enjoyed these fajitas.  'Mexican' inspired food is always a great meal option for us as it offers a nice well-rounded meal even without the cheese or sour cream.
