The Creamiest Mac & Cheese Ever: Dairy free and Gluten free *AND GIVEAWAY!

Do you miss the creamy mac and cheese you always knew and loved due to food allergies or an intolerance to dairy?  Well, did I find a recipe for YOU!

I haven't made mac and cheese with "real" cow's milk cheese, milk and butter for at least 3 years now (since we found out Little Guy had food allergies to cow's milk among other things). I've been making another gluten free and vegan mac and cheese recipe as a substitute. It's definitely a tasty dish, but the mac and cheese from Daiya's recipe page is my new favorite.  It's completely rich, creamy and decadent. YUM.

Here are the ingredients I used:

  • Gluten-free quinoa pasta
  • Ricemilk
  • Daiya cheddar style shreds
  • Vegan Gourmet cream cheese
  • Earth balance "butter"

vegan mac and cheese

It's just about the easiest gluten-free and dairy-free easy mac you could make. You just make and drain the pasta, add the cream cheese and melt it in the same pot, add the cheese in small portions, then add the butter and milk.

Note on 12/2/13: Sadly, Daiya removed the recipe and I never copied it down!  My next "to-do" is to try to recreate this recipe and post it soon!

I gave Little guy a nice plate of his dairy-free mac and cheese along with some broccoli and bean salad (yes I make this bean salad a lot, but little guy likes it a lot!). He LOVED everything, and said the mac and cheese was mmmm, creamy.

I froze the rest of the mac and cheese on a cookie sheet, lined with parchment paper.  I separated them into small portions, and once they were frozen I put them in a freezer bag in the freezer. I love having serving size portions of ready-made mac and cheese that are easy to pop in the microwave and eat!

Leave a comment below before Friday, August 23, 2013 about your favorite meal made with Daiya, or how you'd like to use it!  I'll randomly choose one comment and mail you 5 Daiya coupons for free Daiya products.

Although Daiya did send me coupons to try their cheese (which I actually already used and depended on!), Daiya did not sponsor this post. My views and opinions expressed on this blog are purely my own.

I have only tried the mozzarella Daiya for vegan pizza. I can't wait to try the mac and cheese recipe. Thanks for posting it!

Love the recipe- sometimes I miss the creamy/fatty texture in my meals. Daiya Mozzerella on blue corn chips and black beans is my treat.

Mmmm, sounds like an awesome nacho treat Christina!

Very inspiring!! Yum! Even though my son just passed his baked cheese food challenge, we are not ready for dairy mac and cheese!

This looks SOOOO yummy! Going to try it for sure.

It's such good news that he passed! Congrats! This recipe is a great alternative, even for cow's milk cheese lovers :)

I like to make grilled cheese sandwiches with the slices. It certainly tastes better than some of the dairy alternatives.

Wow, that mac and cheese looks fantastic! I can't wait to try to make it. Daiya is such a revolutionary product; I use it for everything from grilled cheese sandwiches to vegan "chicken" parmesan, and it melts perfectly every single time. Love it!!!

For my mac and cheese I've just been using Daiya cheddar style shreds with a little bit of pasta water. This sounds so much better! Can't wait to try it!

The mac and cheese from the Chicago Vegan Company is amazing. I've only tried Daiya for pizza, too. I wonder how they compare for this!

I like Daiya especially mixed in with chili or, of course, on pizza! I use the shreds the most but am liking the slices a lot also.

I like Daiya mixed into chili and, of course, also on top of pizza! I also like making roesti with it. I use the shreds most often but am liking the slices quite a bit too.

I love the slices too! We just found them in our local stores, and I'm so happy to have the slice option now.

Yes, rice milk works great! Hope you try and enjoy it!

Kathryn @ Mamacado said...

Oooh, I haven't tried it with chicken parm yet. Yum.

Yes, my other recipe is just about the same. This is MUCH creamier and decadent.

Send me the recipe! Sounds awesome!

Sounds SO good. I wish I could give my Little Guy eggs, but we make do without them!

The link is broken! Could you share the recipe please? My son misses mac & cheese tremendously and would love to try this!

Kathryn @ Mamacado said...

Hi Nichole,
You're right, Daiya changed their recipe page. I've emailed a Daiya representative to try to get the recipe for you! In the meantime, here's my other mac and cheese recipe that works nicely. It's not as creamy as this one, but we find it satisfies our mac and cheese craving too!

Whenever you find the recipe again, would you please post it? Thanks!

Kathryn @ Mamacado said...

Lp - I definitely will. On my to do list to recreate this recipe!

Lp said...

Oh, one more thing: in your picture you don't use daiya cream cheese, but that's all I have. It should work though, right? Thanks again!

Kathryn @ Mamacado said...

LP - I'm sure Daiya will work just fine! I don't think Daiya cream cheese was available in my grocery store when I made this. Consider yourself lucky you can find it!
