I haven't made mac and cheese with "real" cow's milk cheese, milk and butter for at least 3 years now (since we found out Little Guy had food allergies to cow's milk among other things). I've been making another gluten free and vegan mac and cheese recipe as a substitute. It's definitely a tasty dish, but the mac and cheese from Daiya's recipe page is my new favorite. It's completely rich, creamy and decadent. YUM.
Here are the ingredients I used:
- Gluten-free quinoa pasta
- Ricemilk
- Daiya cheddar style shreds
- Vegan Gourmet cream cheese
- Earth balance "butter"
It's just about the easiest gluten-free and dairy-free easy mac you could make. You just make and drain the pasta, add the cream cheese and melt it in the same pot, add the cheese in small portions, then add the butter and milk.

I gave Little guy a nice plate of his dairy-free mac and cheese along with some broccoli and bean salad (yes I make this bean salad a lot, but little guy likes it a lot!). He LOVED everything, and said the mac and cheese was mmmm, creamy.
I froze the rest of the mac and cheese on a cookie sheet, lined with parchment paper. I separated them into small portions, and once they were frozen I put them in a freezer bag in the freezer. I love having serving size portions of ready-made mac and cheese that are easy to pop in the microwave and eat!

Love the recipe- sometimes I miss the creamy/fatty texture in my meals. Daiya Mozzerella on blue corn chips and black beans is my treat.

Wow, that mac and cheese looks fantastic! I can't wait to try to make it. Daiya is such a revolutionary product; I use it for everything from grilled cheese sandwiches to vegan "chicken" parmesan, and it melts perfectly every single time. Love it!!!

The mac and cheese from the Chicago Vegan Company is amazing. I've only tried Daiya for pizza, too. I wonder how they compare for this!
I like Daiya especially mixed in with chili or, of course, on pizza! I use the shreds the most but am liking the slices a lot also.

You're right, Daiya changed their recipe page. I've emailed a Daiya representative to try to get the recipe for you! In the meantime, here's my other mac and cheese recipe that works nicely. It's not as creamy as this one, but we find it satisfies our mac and cheese craving too!

LP - I'm sure Daiya will work just fine! I don't think Daiya cream cheese was available in my grocery store when I made this. Consider yourself lucky you can find it!
