Chocolate Avocado Pudding: Dairy Free

Pudding doesn't make a regular appearance around here, but some cool chocolate decadence sounded tasty on a recent hot summer day.  I also had a few ripe avocados to use up and I thought this sounded like a great recipe which I adapted from two new blogs I recently discovered: here and here.



Here are the ingredients I used:
  • 1 avocado
  • 1 banana
  • 1 cup rice milk
  • 2 Tbsp agave nectar
  • 1/4 cup cocoa powder


By the way, this is my favorite way to cut an avocado if you haven't tried it before.

Put all ingredients in a food processor or blender and blend!

It turned out very well with maybe a few tiny avocado chunks leftover, which I blame on my food processor.  Chill for at least 1 hour, add a garnish if you'd like, and eat!

I added a bit of unsweetened coconut to one.

 Unsweetened coconut and Enjoy Life Chocolate Chips (Dairy Free) to another.
 
And the above two ingredients and bananas to the third.  This was my favorite.  The bananas on top really made it yummy!

In full disclosure, my toddler didn't like the first bite of this, maybe because it wasn't sweet enough?  I may try to use vanilla soy milk next time which is much sweeter than the unsweetened rice milk.  It also wasn't as thick as regular pudding, but I still enjoyed this thoroughly as a mommy treat full of whole food ingredients!
