Yes, I think meal-planning may make my life much easier, however painful I envision it to be right now! I usually have one or two big meals planned and then try to "wing-it" for the others. But I never actually plan every meal for each day of the week.
I have to say, if Little Guy didn't have food allergies, we would probably have at least one night of "take out" food a week....most likely pizza or Chinese/Japanese food. But eating out is not so easy right now, so we'll stick with cooking our own yummy food at home!
So, here's my allergy-friendly meal plan for the week. All meals here are free of dairy, gluten, egg, nuts and sesame. Please remember to read labels every time and do/cook what's right for your family:
MONDAY: Simple Summer Sausage Veggies and Pasta - one of my favorite easy meals. Use your favorite veggies and seasonings.
TUESDAY: Easy Vegan Quesadillas - this is usually one of my go-to back-up meals, but we like quesadillas so much we eat them regularly!
WEDNESDAY: Turkey Burgers with Avocado and Corn - good cooked on the grill or even in a pan. Avocado really MAKES this meal if you can't have cheese. Also add your favorite veggies as a side.
THURSDAY: Kale and Tomato Pasta - a yummy meat-free meal. Use quinoa pasta for more protein.
FRIDAY: Veggie-licious Vegan Pizza - I actually made this gluten-free, dairy-free and egg-free pizza last week and it was GREAT (I say, why not have pizza once a week!?). I added olives to my part of the pizza since 3 year old Little Guy doesn't care for them (yet).
