Meal Plan: Take Two

I think I need an intervention.

A meal plan intervention.

I've tried to create weekly meal plans over the past few months, and they fizzle out at about day 2. I'm more of a "cook by the seat of my pants" kind of gal. Meal planning is hard, especially when I work 40 hours a week and have a 1 and 3 year old who don't offer me much time to cook at about 5:30pm!

Yes, I know that I should prep most meals on Sundays, but what happens when you're out and about on Sunday?

Yes, I know that the crock pot should be my friend, but I'm not the biggest fan of the taste of crock pot meals. I think I always over cook them!

So, this week I'm planning rather easy meals.  THIS week I'm going to stick with my plan. Yes, this is the week it will work!

I'm making EASY meals that require just a bit of cooking, reheating or defrosting from the freezer.  That's just the way I have to work it!  BUT I do try to keep it all healthy and balanced.

Here's my meal plan for the week. It's of course an allergy-friendly meal plan. Free of eggs, dairy, peanuts, tree nuts and sesame for Little Guy. As always, please do what's right for your family and read all labels.

MONDAY: Leftover gluten-free and dairy-free homemade mac and cheese + Applegate sausage + broccoli.

TUESDAY: Previously made chili from freezer + fresh avocado on top.

WEDNESDAY: Quinoa pasta + spinach + tomato sauce + turkey from freezer.

THURSDAY:  Homemade gluten-free and dairy-free pizza + salad for adults and veggies/fruit for kids.

FRIDAYHomemade pizza leftovers with roasted butternut squash on the side.

So what did you do this weekend?  We had MORE fall fun at two different farms with friends. With the perfect fall weather we've been having here in the Philly area, it's been a great time to get out and play!

I love the pictures ! It has been beautiful weather these past weeks :) Your meal plan looks wonderful for a full time working mother of two young ones. Since I work full time and don't get home til 5:30 I always make something on Sunday that we can eat for at least 4 days like chili, chicken with veggies, casseroles, meatloaf etc...I don't want to be cooking at 6 at night so we just eat left overs..... and then Thursday or Friday get take out! Of course there is only two of us to feed ...oh and our kitty Sophie!

I used to meal plan before Jack came along. Now it's nearly impossible to cook a meal at 5:00 when there's just one of you and kid(s). I make a meal on Sunday that will last 2-3 dinners and Trader Joes has become my best friend for all other meals. I usually have something I can throw in the oven quickly.

Ah yes, I should check out Trader Joe's more often, but out of the 4 grocery stores that are (thankfully) close to us, it's not one of them! It's about 20 minutes away which I KNOW isn't long, but it is compared to the location of the other stores! Good way to meal plan though!
