Kale and Tomato Gluten-Free Pasta

I tried a new recipe from The Allergist Mom's blog, and my toddler and I both enjoyed it!  Check out The Allergist Mom's blog for the full recipe.  I made a few minor changes to please our palates, and it turned out great.  Next time I'm also going to add chicken and/or beans to increase the amount of protein.  

Ingredients I used:

  • 1 bunch kale
  • olive oil
  • pepper
  • salt-free Italian seasoning (mix of basil, oregano, etc.)
  • cherry tomatoes
  • 1 clove garlic
  • gluten-free quinoa pasta
  • Daiya mozzarella cheese

 Beautiful kale!
 My toddler kept asking for more Daiya cheese on top - so this was only the first sprinkle!


This plate is the size of a small dessert plate, but my toddler ate every single bite of this meal as you can see....

Pasta dishes are always a winner here too! I love that you can get so many veggies into your kids when you serve them in pasta! This looks delicious!
