This King Arthur Flour gluten-free pancake mix makes pancakes that are thick, fluffy and very similar to traditional pancakes. They're easy to make too!
Here are the ingredients you need. The directions call for eggs, but I substitute 1/4 cup of applesauce for 1 egg. I also use either soymilk or rice milk depending on what I have in the fridge.
Whisk is all together.
Pour it onto the griddle as you would with regular pancakes. The only difference with gluten-free pancakes is that you know they're about ready to turn over when the edges look dry, NOT when they bubble as with traditional pancakes. These bubbles were there from the beginning.
We made a "monster pancake" breakfast that my son really enjoyed. We put soy yogurt on top and added blueberries and strawberries for the face.

Thank you for the step-by-step directions. I wish I would have had this information a year ago. Somehow all of the "printed words" in the literature is unnerving, but when you see the meals....step-by-step, it is not as overwhelming. Thank You.

This is an awesome blog Kathryn! You are doing a great job for others out there with food allergies too and of course my little Grandson is the cutest :) The meals you have prepared do look very delicious besides being very healthy also.
