I grew up eating chicken salad, tuna salad, egg-salad....all made with mayo (or Miracle Whip!). I still love those salads, and wanted to find a good alternative for my son who can't eat mayo due to his allergies.
Then I realized avocado is a perfect solution!!
Here's my allergy-friendly version of chicken salad. You can make it in 10 minutes or less.
Fresh chicken is ideal, but in a pinch you can use canned chicken. I'm still looking for an organic canned brand, but I found this at my local Giant grocery store, and it's raised without antibiotics and just includes chicken - no fillers.
Mash up half an avocado or more - whatever you prefer.
Add fresh diced tomatoes or other veggies or fresh herbs.
Spread on your favorite bread, wrap or salad, or even eat by itself! I'm still looking for a better bread alternative for my son - I don't like that this looks like unhealthy white bread, but it's the best option we have right now. It's King Arthur's Gluten Free bread basically made of tapioca and rice flour. More posts to come about bread!!

Cant wait to try this! I have a question about the Kings bread, is it good? I bought a gluten free bread one time and it was terrible. I would like to find a gluten free bread that's as close to regular white bread as possible. Any suggestions? Please email me at mfergie1231@yahoo.com.

Yes, King Arthur's Gluten Free Bread Mix is THE mix I've been using for at least 2 years now. We substitute applesauce for the eggs (1/4 cup applesauce = 1 egg) and follow all directions. I leave a few pieces out for the next day or two, but freeze the rest. Since it doesn't include preservatives it tends to get moldy in just a few days. But it's still nice and soft if I microwave it for a minute from the freezer. I'll email you!
