Butternut Squash Secret

So I learned something revolutionary from my aunt recently.  It's one of those kitchen tips you might find in Real Simple magazine and you say, "Well, that's easy. Now why didn't I think of that"?

What is this amazing secret?

You can PEEL a butternut squash with a regular old potato peeler. 

If you already knew this, then hats off to ya. This was news to me though.

I've been using a knife to cut those darn butternut squashes for years. I even resorted to buying those really expensive, and seemingly less fresh, pre-cut butternut squash.  I felt like I just don't have time or energy to cut a butternut squash right now!

However, I used my handy OXO potato peeler on this squash and it worked like magic. I believe the way to make this successful is to have a nice/sharp peeler.

Look a those beautiful butternut squash peel ribbons!  I love this method because it's easier of course, but also because it doesn't waste any squash.

Even though we're finally coming out of winter (AKA butternut squash season for me!), I was recently in the mood for it and tried a fun new allergy-friendly butternut squash soup.

I followed this recipe to make this butternut squash, white bean and kale soup. Boy was it good. It was allergy-friendly for Little Guy, but he's still not a fan of soup. Who knows why!?

I also roasted some butternut squash with a little olive oil sprayed on the pan and on top of the squash. I baked it at 400 degrees for about 20 minutes or so.

Roasting is my current favorite cooking method as I mentioned here and here.

Little Gal is now 7 months old (I can't believe it!), and she's trying all sorts of different fruits and veggies right now. I just mashed up some of the roasted squash for her, added some water to make it less thick, and voila - I made baby food :)

Two things: I had NO idea you could peel it like that and have been buying the prepared packages from Trader Joes and I have that same peeler and love it. Can't wait to try this next winter.

Great! I probably should also wait until next winter to eat butternut squash since it's in season then, but I'm hooked and will probably still eat it this spring!
