Life has been more than crazy around here trying to handle a toddler and newborn, but we're getting through it! It's been 7 weeks since baby girl was born and she's sleeping rather well...even sleeping "through the night" a few nights ago from 9:30pm to 4:30am! She hasn't continued the trend, but has been waking up about every 3 - 4 hours to eat and then goes right back to sleep. I really couldn't ask for a better baby.
Right now my toddler is taking his second nap in about 6 weeks, and he fell asleep on the floor of his room. UGH. He was a very consistent napper for over a year, and now has become more difficult. We're still trying to get his sleep schedule back on track after all the changes around here.
I'm more desperate than even for quick meals and snacks, so I thought I'd show my new favorite quick recipe: Simple Oat Date Bars.
You need 3 ingredients:
- 1 cup dates
- 1 cup oats
- 2 - 3 Tbsp water (just enough so everything mixes together nicely)
*I have yet to find dates that are labeled as "nut free". I may try an online search in the future so my son can safely eat these. For now, they're just my snack!
Directions: Mix all ingredients in blender or food processor.
You can press the mixture into a small loaf pan, then cut up the bars and keep them on the counter, refrigerate or freeze them.
These remind me of little granola bars.
I also tried forming them into little "power bars". These almost look like small Larabars.
These really taste like a mix between an oatmeal cookie and granola bar. They're satisfying for breakfast, a quick snack or dessert. I also eat them right out of the freezer as they stay soft and chewy. I can't rave enough about these little beauties!

I have been looking for a lowfat version of a Larabar, per my husband's request, and I think your recipe will fit the bill. Thanks for sharing and I will let you know what hubby thinks of them after I make them.
