Easy Cupcake Mix

What do you bring for dessert for your food allergic child to compete with this!??


Thankfully, I really didn't have to worry about competing with this cupcake tower since:

  • This was my mother-in-law's picnic and she informed me beforehand there would be cupcakes, so I planned to bring safe cupcakes for Henry
  • My mother-in-law is so considerate and had a HUGE cookie tray of allergy-friendly cookies that Henry could eat....he LOVED them!
  • My son is only 2 and was preoccupied with running around playing with his cousins at the park anyway, and hardly even saw these cupcakes!
I'm still testing out different cupcake recipes to find something "non-boxed", but for now, I'm happy with the way these Cherrybrook Kitchen cupcakes turn out.



They're as easy as any boxed cupcake mix.  This is all you need:


Mix the batter with all the ingredients:

Fill the cupcake cups as usual:

Out comes a delicious cupcake!


I used this vanilla frosting recipe from the free recipes on the Kids with Food Allergies website. The only ingredients include:


  • 3 cups confectioner's sugar
  • 1 Tbsp vanilla extract
  • 1/2 cup margarine
  • 3 Tbsp water 


I've tried a few different frosting recipes and find this one works the best and it's SO easy.  I usually just cut the recipe in half since this boxed cupcake mix makes about 12 cupcakes.


I added some sprinkles, and voila....a delicious cupcake!



Anyone have any great and easy cupcake recipes??

With fancy blue sprinkles, what kid wouldn't love to have that cupcake?!

Ha, very true! I may try to make my next batch even "fancier" in some way!
