Black Bean Tortilla Bake

Happy 4th of July!!

Here's a recipe I created from scratch.  I normally use recipes for meals I make for the first time, but I just winged it for this one!  I'm trying to find/come up with new ideas for non-meat meal options for my son that incorporate a bunch of healthy ingredients and protein!  However, I try to limit soy-based meals (like tofu) since he drinks soy milk, eats soy yogurt, and gets soy in other forms.  So, beans are my go-to ingredient for non-meat meals!

I call this a black bean tortilla bake.  However, you could use any kind of beans you'd like.  Next time I make this I plan to also add more veggies like mushrooms and corn.

Here is what I used for this one:

  • Two gluten-free tortillas
  • Whole small zucchini (could be any size though)
  • 1/2 cup Daiya cheese (I used more mozzarella than cheddar)
  • Whole can diced tomatoes
  • Whole can black beans
  • 1/4 cup of mild salsa (I used mild since my toddler was eating it, but I'd use medium or even hot for adult tastes!)
*Other ingredients I'd like to try in the future include: Mushrooms, corn, butternut squash, fresh tomatoes and fresh cilantro.  yum.



Dice the zucchini.  Then mix the zucchini, can of diced tomatoes, can of black beans, and 1/4 cup of salsa with a spoon in a bowl.  Spread a small amount of the mixture on the bottom of an 8x8 pan.



Place your first tortilla on top of the mixture.  Then add half of the mixture on top of the tortilla.

Add 1/4 cup Daiya cheese on top.
  
 Repeat with your next tortilla, bean mixture, and then finish with the rest of your cheese.  Place in 350 degree oven for about 30 minutes until it comes out hot and bubbling.


This also tastes great with a side of avocado or avocado on top. A smooth and creamy complement to the tortilla bake.

My son and I both liked this meal and I will definitely try it again soon!



Anyone have a similar recipe, or ideas for other ingredients to make this even more yummy?

I think fresh corn off of the cob would be a nice addition. Also, couldn't regular corn tortillas be used as well as the non-gluten flour tortillas for a slightly different taste?

Yes fresh corn would be a wonderful addition, I agree! Also, yes, if you don't have an allergy to gluten, regular wheat or other tortillas would work wonderfully. I've considered using corn tortillas, but can't seem to find a brand that doesn't have all of the crazy preservatives in some of the corn tortillas I find in the store.

The tortillas I used here have less "junk" in them than other corn tortillas I've seen. Let me know if you have a good suggestion for a good tortilla brand!
