Here's one meal I made for my son that he really enjoyed. It has a nice balance of protein and fat, and packs in veggies and fruit too. I usually like to add carbs into the meal also to balance it out, but if he doesn't get everything in one meal, then I certainly balance it in his snacks and other meals throughout the day.
I only snapped one photo of this meal (most likely because I had a toddler hanging onto me while making it). Here are the basics:
- I cooked the chicken in about an inch of chicken broth and added rosemary, basil and a little bit of salt.
- I cut a spaghetti squash in half, and then cooked it in the microwave (just Google this method and there are lots of links on how to do it). I then heated up some spaghetti sauce and mixed it with the squash.
- I cut up some avocado and tomato to make sure he had enough fat in his meal - an important part of a toddler's diet.
He loved this meal!
